CALAMARI WITH ROASTED TOMATOES
If you’re a seafood lover like me, you’ll love this easy calamari pan-fried dish. Perfect for a quick Friday night meal or a weekend lunch. SCRUM-DILLY-UMPTIOUS!!! Have a great weekend my friends ♥
INGREDIENTS
Calamari
800g fresh calamari, cleaned and cut into 3cm pieces
Flour – for dusting
Olive oil
2 cloves garlic, finely chopped
1 chilli, finely chopped
8 fresh basil leaves, torn
100g frozen peas, thawed
Juice of ½ a lemon
Sea salt & freshly ground pepper
1 lemon, cut into wedges for serving
Roasted tomatoes
Handful parsley stalks
8 large roma tomatoes, cored, halved and seeded
2 bay leaves
6 peppercorns
Salt & pepper
¼ cup flat leaf parsley, chopped
Olive oil
METHOD
1. Lightly dust the calamari in some flour (use a sieve if necessary).
2. Heat olive oil in a pan and fry calamari golden brown, add the garlic, chilli and basil, and toss together, then add the peas, salt and pepper, lemon juice, some chopped parsley, and give a final toss.
For the roasted tomatoes
1. Pre-heat oven at 160°C.
2. Arrange the parsley stalks on the bottom of a baking tray, place the tomato halves on top, add the bay leaves, peppercorns, salt and pepper and drizzle with olive oil.
3. Place in the oven and cook until tomatoes become tender, about 15-20 minutes.
To serve
1. Arrange two tomato halves in the middle of a plate and place calamari on top, drizzle with some extra virgin olive oil, add a wedge of lemon.

I like calamari. I have not purchased squid in years and am not sure where to get it, but my brother would know. This is an easy recipe that even I could prepare. I might do this. My life has been hectic lately but this cannot go on forever. Surely peace and safety will return and we will dine again on home cooked delights. Thank you for sharing this recipe, Amanda.
