Spiced Rice Lamb – Indian Style

Masterchef has me totally hooked, their recipes are so easy and inspiring…if you want to try something totally different, charm your guests with a very impressive meal, this is the one to do!!  It takes only about 30 minutes to prepare, stick it in the oven and you have a very juicy, delicious meal.  ENJOY!!


1 ¼ cup basmati rice, washed well
1 x 40g packet sultanas
1 x 35g sachetRice Cookers Mild Indian Rice
50g slivered almonds, toasted
½ cup dried apricots, chopped
1.5 kg  lamb shoulder, de-boned and flattened out


1. Preheat oven to 200′ Celsius.

2. Place washed rice, sultanas,  Rice Cookers recipe base, almonds, apricots and 2 cups (500ml) water into the rice cooker insert pot and stir.

3. Cover with lid and press selector control to COOK (DO NOT REMOVE LID during cooking). Cook until the selector control switches to KEEP WARM.

4. Let stand for 10 minutes with the lid on then let cool.

5. Open the lamb onto a flat surface and spread 1 ½ cups of the Indian rice onto the inside of the lamb. Roll the lamb up and secure with kitchen string.

6. Oil and season the lamb with salt and pepper then bake for 1 ½ hrs. Remove from oven and let rest for 10 minutes. Slice and serve.

  2. Looks like a good way to cook a shoulder roast of lamb. My hubby is from Norway where they eat a lot of lamb. His favorite recipe is lamb and cabbage. He would like this, I know. Thank you for sharing.

  5. I’m impressed, buttercup! Seven kms per day. I walk nearly every day, but my closer to home routes are shorter. I seldom eat meat and the last time, it was spicy lamb-balls in Naan bread with the ever tantalizing cucumber sauce and condiments.
