CARAMELISED RED ONION AND SPINACHE FLAN

INGREDIENTS

Ready-made shortcrust pastry 1 cup (250 ml) cream, 1 tablespoon (15 ml) margarine, 1 teaspoon (5 ml) sugar, 12 baby spinach leaves
5 eggs, 1 Packet Roasted Vegetable Bake, 1 red onion, sliced 125 g feta cheese, roughly broken.

INSTRUCTIONS

Preheat oven to 180°C.
Grease a large rectangular flan tin.
Line with pastry and trim off the edges.
In a large bowl beat together eggs, cream and Roasted Vegetable Bake.
In a frying pan heat margarine.
Add onion and sugar, fry until caramelised.
Spoon into the bottom of the flan dish.
Add feta cheese and spinach leaves.
Pour egg mixture over feta and spinach.
Bake for 40 minutes or until firm in the centre.
Serve hot or cold.

THAT’S WHAT’S FOR DINNER TONIGHT FRIENDS!  Btw….it was only 5 degrees here this morning!! Brrrrrr….

EASY VEGETABLE BAKE

Any fresh vegetables.   (This is what I use)  2x Carrots,  Sweet Potatoe, Pumpkin,  Mushrooms,  Brocolli,  Cauliflower,  2 packets of fresh Spinach Leaves, Onion. (You can use Potatoe, Egg…anything you like)

Cut all into pieces and cook until soft…..(put the spinach leaves in just before finished) Use 1 Tub of Ricotta cheese (I use the fat free one) and mix with 1 or 2 eggs (depending how big the dish is)  Mix it all together, place in a casserole dish and top with Tasty Cheese .  Place in oven for about 20 min at 180 degrees or until brown and set. (I normally put the griller on just before I take it out for a bit of colour)

Optional…..I sometimes put pieces of bacon (or any leftover meat ) in.   This actually tastes better the next day!!!!………….Oh yes and make sure you drain the veggies well.   Easy and really very tasty!  Enjoy oxox
