Ready-made shortcrust pastry 1 cup (250 ml) cream, 1 tablespoon (15 ml) margarine, 1 teaspoon (5 ml) sugar, 12 baby spinach leaves
5 eggs, 1 Packet Roasted Vegetable Bake, 1 red onion, sliced 125 g feta cheese, roughly broken.


Preheat oven to 180°C.
Grease a large rectangular flan tin.
Line with pastry and trim off the edges.
In a large bowl beat together eggs, cream and Roasted Vegetable Bake.
In a frying pan heat margarine.
Add onion and sugar, fry until caramelised.
Spoon into the bottom of the flan dish.
Add feta cheese and spinach leaves.
Pour egg mixture over feta and spinach.
Bake for 40 minutes or until firm in the centre.
Serve hot or cold.
